Carrot Hot Dogs

We have a friend that was a vegetarian. He's no longer as strict with himself because he is controlling the health issues he was having with medication, but about a year ago, I was rolling in carrots from a crop share that I was splitting with a friend. I scrolled through Pinterest and found this recipe for carrot hot dogs. I made them for our friend and my husband told me if it was a complete fail we'd just go out for dinner. But it wasn't! They were quite good, so the next time we had carrots from the CSA, I tried it again. My family was over it - but I enjoyed them.

The weather hasn't been great this summer, so we didn't receive our first round of carrots until last week. I decided that I was not going to let as many of the vegetables go to waste as I normally do, but that requires being home to engage with the whole cooking experience. Thankfully, aside from the annual trick-or-treating on Wednesday, I only have one swim lesson this week and absolutely nothing else scheduled for the entire week in the evenings. (In case you're wondering, I am at least on the go most nights until about 8 PM).

Tonight, I decided that I would do carrot hot dogs again, but modify the recipe so that it used up all the carrots sitting on my counter. To make carrot hot dogs you can use this recipe, or you can follow my modified version and you'll need:

4-6 carrots, peeled

1/2 cup Bragg's Liquid Amino Acids

1 cup water

1/4 cup rice vinegar

1 1/2 T apple cider vinegar

1 tsp garlic powder

1 tsp liquid smoke

1/2 tsp black pepper

1/4 tsp onion powder

Start with peeled carrots

Boil for 6 minutes and then rinse with cold water to stop cooking process

Mix together ingredients in a zip-tight bag

I had no idea where to find Bragg's Liquid Amino Acids or liquid smoke at the grocery store - and I tend to forget that I need to do more than think about ordering it from Amazon (I mean I actually have to hit submit for me to get an order so that leaves me shopping for things at the last minute). But if you're more of a planner, it may be easier to just have it shipped to your house, because after all, who (besides my mom) doesn't have Amazon Prime?
